We had a pretty yummy eating week.
Mediterranean lentils (comes in a bag with spice kit at HEB) with sweet potato, pineapple and salad with peanut sauce. ("Clean out the pantry" dinner from last night)
Zaru soba! Finally made it. Probably won't make it again because it took a lot of effort and wasn't FABULOUS tasting. It was okay. :)
I also made Vietnamese summer rolls with This Tofu Recipe, field greens, rice noodles and cucumber filling with peanut dipping sauce. O M G. I have no idea how I didn't get a photo. We probably ate it all too quickly. That tofu is, well, amazing.
My total was $65. Earlier in the day I spent $7 on toilet paper and generic Swiffer wet pads.
That makes the Month Of January Grocery TOTAL: $207
I bought Soyrizo for dinner due to my exhaustedness. :)
Kellogg's also started making a gluten free Rice Crispies made with brown rice. Unlike me, my husband likes Rice Crispies and so I thought it'd mix up his morning routine. I also made some Vegan Gluten Free Pancakes for breakfast this morning (I made them after dinner last night). I'm hoping to make some Fried Mush this week, too. :)
Hopefully I'll be back this weekend with a Menu, I am too pooped to work on it now.
